Upon arrival, the layout of the kitchen, open to view, invites guests to the table among the vines, lavender and olive trees of the six hectares of the estate, lulling them with a familiar air , a languor of life, a know-how like the Luberon has kept the secret.
La Table d'Égenia is anchored in the terroirs of Provence and the Luberon. Its flavors, its generosity and its quality sectors are available according to a dynamic, constantly renewed menu, the fruit of the expertise of Gregory Cornen, head of the Table.
For 10 years, in Switzerland, Gregory Cornen worked in palaces, such as the Fairmont in Geneva and worked alongside starred chefs and Meilleurs Ouvriers de France. Building on his experience, he returned to France as executive chef for the Accor group. After running his own restaurant, he returned to the Provence region from his childhood, in order to offer his cuisine, made with local and seasonal products.
So, every day, the fish leaves the stalls of RM Marée, established at the port of l'Estaque, in Marseille to come and garnish your plates.
Available in brasero and grilled, the meat is raised at the foot of Mont Ventoux by the Joassan brothers, a guarantee of quality and proximity.
Similarly, fruits and vegetables come to us from Robion, located less than 20 kilometers away and selected by Guy and Fabien Lavagna from Un Coin de Jardin, a family business.
As for the wines, the selection of Miguel Santos, sommelier at the Table d'Egenia, gives pride of place to the Appellations d'Origine Contrôlées du Ventoux, Luberon and the vineyards of the Rhône valley, through a selection established with Cave Sylla, in Apt, the Domaine de la Verrière in Goult and the Domaine Paul Jaboulet Ainé.
Lovers of pleasure without alcohol will appreciate our partnership with the Jardin des Papes which, in Carpentras, has been engaged for years in an approach to eco-responsible production and the promotion of local products, notably through the production of Carpentras strawberries and Muscat du Ventoux grapes.
